Chicken Tortilla Soup

I posted this recipe on my Instagram story last week and have been getting requests from several of you daily asking me to write up a blog post so here is what I used. This is really a very simple recipe and it tastes so good! Enjoy

What You Need:

1 onion

1 garlic clove (this is because I love garlic but you can use 3 bulbs if you are such a fan)

1 Bunch of Cilantro

2 Cans of Diced Fire Roasted Tomatoes

1 can of Black Beans

1 bag of Frozen corn

1 Rotisserie Chicken from the store (shred all the meat)

2 boxes of Chicken Broth (during flu season I like one of them to be bone broth)

3 Bay Leaves

1 Tsp of Black Pepper

1 tsp Paprika

2 tsp Cumin

1/4 tsp Cayenne pepper

1 TBS pink Salt

1 TBS Chilli Powder

Steps1: Shred all the chicken into a bowl

Step 2: In an oiled pot throw in the onion and garlic on Medium high

Step 3: After the onion starts to brown lower the heat to medium, throw in all the chicken, mix for a couple minutes

Step 4: Add to Cans of Fire Roasted Tomatoes

Step 5: Add 1 can of black beans (do not drain)

Step 6: Add 1 frozen bag of Corn

Step 7: Chop 1 whole bunch of cilantro and throw it all in

Step 8: Add all the chicken broth

Step 9: Add all the seasoning, black pepper, paprika, cumin, cayenne pepper, pink salt, chili powder, (mix and taste after a few minutes, taste to make sure you don’t need to add any more salt.

Step 10: Let it cook for 15 min on medium low. (the chicken is cook so no need to cook it long)

Toppings:

I like ti top my soup with:

Sour Cream

Avocado

Mexican Cheese

Cilantro

Jalapeños

Crispy Tortillas or Tortilla Chips

Option #2 Use a InstaPot

Throw all the ingredients in an insta pot, in this recipe I used 3 chicken breasts inside of already cooked chicken, also an option add green peppers. set Instant for 15 min and it should be ready.
