Mango Salsa Crispy Salmon on Coconut Rice
If you are looking for a healthy dish that doesn't take hours to make you have to try this one. One of my favorite things to eat is this Crispy Salmon Mango Salsa. It is so good!!! I just tried it on top of a bed of coconut rice and it took this dish to the next level! ere is the recipe you all have been asking for.
1 mango peeled and chopped
1 red pepper
1/4 cup od red onion
1/2 cup of cilantro
juice of 1 lime
1 Tbsp Avocado Oil
Salt and Pepper to taste.
-Chop all items and place into a bowl, add oil avocado oil, salt and pepper last and mix.
2 cups of Jasmine white rice
2 cups of coconut water
1 can of coconut milk
place in a rice cooker and press cook!
3 salmon filets about 4-6oz
using a non-stick pan, coat the pan using about 1 tbsp of avocado oil. cook on medium-low heat until salmon skin is crispy about 8-10min.
